When it comes to your party or wedding reception, you want to gift your guests with unique favours. For the Christmas in July party, your guests will be kept warm with a jar of Capsicum and Chilli Jam. The recipe states:

Prep: 15 minutes

Cook: 65 minutes

Makes: 750ml

*Adjust quantities to cater for your guest numbers*

1kg red capsicum

125ml white wine vinegar

2 cups white sugar

2tbs Fowlers Vacola Jamsetta jam-setting mixture

2tsp finely chopped chilli – you can buy this pre-chopped or DIY, just remember to wash hands thoroughly after handling.

Preheat your oven to 180 degrees Celsius. Place capsicums on a baking tray and roast in the oven, turning them once. Roast for one hour. Set aside to cool slightly then cover in plastic wrap and leave to cool. Once completely cool, unwrap and the peel the skin off the capisums. Remove the inside (membrane) and seeds. Place prepped capsicums into a food processor and blend until smooth.

In a saucepan mix the pureed capsicum with vinegar and sugar over a low heat until the sugar has dissolved. Add the jam-setting mixture and chilli to the capsicum mix, increase heat to medium and bring contents to the boil, occasionally stir for 5 minutes. Set mixture aside until bubbles settle and using a metal spoon, scoon the mixture into clean, dry jars and seal (the miniature jars have rubber seals). Invert the jar for 2 minutes, then turn and set upright to cool.

Decorate the jars with a square piece of Christmas themed fabric placed over the top of the jar and secured with red, green or gold ribbon and a little tag with your guests’ name. On a plain white label, in neat hand-writing, write the name of the jam, and “store unopened in a cool, dark place out of direct sunlight for up to 6 months. Opened, store in the fridge for up to 6 weeks”.

For the romantic at heart, give your guests little jars of Passionfruit Curd to take home from your wedding reception:

Prep: 10 to 70 minutes

Cooking: 15 minutes

Makes: 1 cup (remember you can adjust the quantity to suit the numbers)

125g chilled butter, roughly chopped

¾ cup caster sugar

¾ cup fresh passionfruit pulp (yum!)

4 egg yolks

Mix the butter, sugar, passionfruit and egg yolks in a medium saucepan and cook over low heat, stirring for 10 to 15 minutes or until the mixture thickens. Spoon the mixture into clean, dry jars and place in the fridge to cool for approx. 1 hour (depending on the size of the jars). Decorate the jars with a simple, pretty ribbon (why not include a little serving spoon or scroll of paper with ways to enjoy the passionfruit curd, such as on “scones with whipped cream”).On the label remember to put “store in fridge for up to 10 days”.

Makes 1 and ½ cups (adjust to cater)

1tbs olive oil

1 finely chopped small brown onion

2 garlic cloves, crushed

1 small fresh red chilli, halved, de-seeded and finely chopped

500g vine-ripened tomatoes, coarsely chopped

2tbs brown sugar

2 tbs white wine vinegar

In medium saucepan, heat the oil over low to medium heat, add onion and cook, stirring often for 5 minutes or until the onion is soft. Add crushed garlic, chopped chilli and stir for another 2 minutes. Add tomato to the mixture and cook for an additional 5 minutes, stirring occasionally until the tomato breaks down. Finally, add the sugar and vinegar, cook for 10 minutes or until the relish thickens then set aside to cool. Spoon relish into the miniature jars, and simply attach label. Easy and the guests will love them!
