Spring Inspirations Menu

When spring has sprung there’s no better excuse to welcome in the warmer weather than a dinner party with a fresh tasting menu of seasonal produce.  Cinnamon Catering shares some menu inspirations for spring entertaining.

Starters

Oven roasted grape tomato and goats’ cheese mini quiches
Herbed scones topped with smoked turkey and port infused figs
Mini pizza rounds with oven roasted capsicum, red onion and bocconcini

Main courses

Zucchini flowers stuffed with Persian fetta and capers
Roasted rack of lamb with mint and walnut pesto

Dessert

Apple Tarte Tatin with Chambord syrup and cinnamon cream

Cocktails

Long Island Iced Tea

Long Island Iced Tea cocktail recipe

1 part vodka
1 part tequila
1 part rum
1 part gin
1 part triple sec
1 1/2 parts sweet and sour mix
1 splash Coca-Cola

Mix ingredients together over ice in a glass. Pour into a shaker and give one brisk shake. Pour back into the glass and ensure there is a touch of fizz at the top. Garnish with lemon.
