Easy Marshmallow Birthday Cake

Discovering a gloriously easy to bake yet stunning birthday cake is one of life's great treats.  Cakes that require little effort but still please the eye and the guest's palettes make parties easier and more wonderful all at once.  This simple marshmallow birthday cake is perfect for baby showers, christenings, first birthdays and little girl's parties.  Change the colour of the marshmallows and frosting to suit your theme.

Start with our best basic birthday cake recipe.

1.5 cups self raising flour
1.25 cups plain flour
1 cup unsalted butter at room temperature
2 cups sugar
4 large eggs also at room temperature
1 cup full cream milk
1 teaspoon vanilla extract

Preheat oven to 180 degrees c.  Grease a round cake pan (we love a springform pan for baking easy to release cakes every time).  Using your electric mixer cream the butter until smooth.   Add the sugar gradually until fluffy - this usually takes around 2-3 minutes.  Add the eggs one at a time, allowing the mixture to beat between adding each new egg.  Add the dry ingredients slowly, alternating with the milk and vanilla to ensure that the mix is incorporated well.  Use a spatula to scrape in the sides often.  Once all the ingredients have been combined and well blended, drop the mixture into the pan and bake for 40 minutes or until cooked through the middle.  The top of the cake will be golden and you should test the centre of the cake to ensure it is dry with a knife or cake tester before removing from the oven.

Then, push in your marshmallows one by one in a swirling pattern starting from the centre top of the cake and working all the way to the bottom of the cake, completely covering the cake in marshmallows side by side.  For added interest, use coloured marshmallows in different sizes, colours and shapes, or keep them uniform in one colour as we have done in our image above.
