Christmas Tree Cookies

Absolutely perfect for giving as little gifts to friends, colleagues and even for hanging from your Christmas tree attached with pretty ribbons, these Christmas Tree cookies will make everyone smile!

Ingredients

1 cup margarine

1 ½ cups caster sugar

1 large egg

1 teaspoon vanilla extract

2 ½ cups plain flour

1 teaspoon baking powder

1 teaspoon cream of tartar

Pinch of salt

Method

  • Cream the margarine and sugar using an electric mixer in a large bowl.  You need the consistency to be light and creamy and the mixture to turn a creamy colour.
  • Gradually add in the egg and vanilla until mixed together well.
  • In another bowl, combine the flour, baking powder, cream of tartar and salt.  Mix together and then gradually add to the bowl of wet ingredients, mixing between adding more dry.
  • Once completely combined, roll the dough into a ball, wrap in plastic cling wrap and place into the fridge for at least half an hour.
  • Preheat the oven to 180 degrees Celsius.  Line a cookie tray with non-stick baking paper.
  • Using a rolling pin, roll out the dough to about 1/3 of a centimetre and cut out Christmas tree shapes using a Christmas Tree cookie cutter.
  • Lay the trees out on the tray and if you will be using them as decorations on the tree, pierce a hole in the top of the tree using a plastic straw or other small round instrument about 1.5cm from the top edge where the star would go.
  • Bake for about 5-8 minutes depending on your oven.  Keep a close eye on them as they bake and bring them out when they are golden brown.
  • Let them cool on a wire rack.  Once completely cool, decorate with your favourite icing and frostings.  Some great ideas include using metallic cachous and icing pens (you can buy these from your local supermarket) to create pretty “ornaments” on the tree.  Use your icing as a “glue” for the cachous and other pretty decorations.
    Once decorated, you can hang from the tree by threading some pretty ribbon through the hole at the top of the cookie, or if you are giving as gifts, place carefully into cellophane bags and attach a ribbon and tag to the top with a message of love for the recipient.
